Ample space has been dedicated by important media to the news of the great success that has recorded the preview presentation at Ischia Safari 2023 of “Uá” the new and original dessert with Ricotta di Bufala Campana DOP, born from the skill of the eclectic pastry chef Marco C. Merola of Contemporanea Caserta.
“Uà”, follows the expression of wonder of the Neapolitan dialect, looks like a ravioli, but instead is the sweet-symbol of the new initiative of the Consorzio di Tutela della Ricotta di Bufala Campana Dop, which focuses on collaborations with chefs and the enhancement of the product as an ingredient of excellence in recipes capable of surprising consumers.
In this context, the collaboration with the chef Marco C. Merola who with “Uá” has created a “surprising dessert” that enhances the unique taste of Ricotta di Bufala Campana DOP, “more balanced than that of cow or goat, is extremely versatile in the kitchen”, as pointed out Benito Lavecchia, President of the Consortium of Protection of our PDO.
