Where does the goodness and the arts of our ancient dairy tradition come from? Pliny the Elder called it “Campania Felix” to emphasize the fertility of Our region, linked to the presence of the river Volturno, with around springs smaller and crystalline rivers, sulfur areas suitable for spas. It was renamed Terra di Lavoro from the Middle Ages, and is the area that includes Capua and the neighboring towns, up to the tower announced. Its natural fertility, the climate particularly suitable and mild, where every type of cultivation and breeding was possible, in particular the buffalo breeding. The richness and variety of agricultural activities and products have their roots even before the Roman era. From the Bourbon kingdom then arose that awareness that today is the heart of a solid and virtuous agri-food economy. Well, the name, which in reality was “Ager Campanus”, originally indicated the territory of the ancient city of Capua; it extended from the slopes of Mount Massico up to the Phlegraean Fields and the Vesuvian area, later also part of the present Molise, of Sannio and Irpinia and the areas around the river Sele.

Let’s talk about the plain of Sele, destination of ancient civilizations and area of Greek Roman worship. At first it was lake and marshy, then reclaimed with an infinite number of irrigation canals. The Piana del Sele has been home to the gentle herds of buffaloes for hundreds of years. Formerly bred in the wild, mainly to be used as animals suitable to help man in the hard work of the fields thanks to their extreme adaptability to the warm and humid climate in swampy territories such as those where the current fertile plain was presented. The territory has a vast testimony of ancient history, beautiful Greek and Roman temples from the area of Paestum along the entire Cilento. Today, fruits such as melon and watermelon are also cultivated. The famous artichoke of the area, typical product and IGT, called “Tondo” for its conformation and the different types of tomatoes awarded the IGT brand. But especially in this vast area between irrigated and watery areas the buffaloes have been running around since the year 1000 AD, as indicated by some documents of the time. In addition to mozzarella, buffalo has always been obtained the tasty ricotta, but also meat.

Civilizations that have succeeded and have enjoyed the well-being of these lands bringing over the centuries cultures and technologies in the breeding of buffaloes and in the processing of their milk. Province of Naples: the entire territory of the municipalities of Acerra, Arzano, Cardito, Frattamaggiore, Frattaminore, Giugliano in Campania, Mugnano di Napoli, Pozzuoli, Qualiano, Provincia di Salerno: the entire territory.

LAZIO REGION – Province of Frosinone: the entire territory of the municipalities of Amaseno, Giuliano di Roma, Villa S. Stefano, Castro dei Volsci, Pofi, Ceccano, Frosinone, Ferentino, Morolo, Alatri, Castrocielo, Ceprano, Roccasecca. – Province of Latina: the entire territory of the municipalities of Cisterna di Latina, Fondi, Lenola, Latina, Maenza, Minturno, Monte S. Biagio, Pontinia, Priverno, Prossedi, Roccagorga, Roccasecca dei Volsci, Sabaudia, S. Felice Circeo, Sermoneta, Sezze, Sonnino, Sperlonga, Terracina, Aprilia, S.
