There is talk of the Consorzio di Tutela della Ricotta di Bufala Campana DOp on the April 2023 issue of “il latte”, historical and authoritative magazine that since 1927 deals with the main issues related to plants, the production and analysis techniques and methods used in the dairy sector. We talk about the importance of evolution, the power and the power of change, of those innovative changes that we made to the Disciplinary from December 2022, with the introduction of the LIGHT and LACTOSE-FREE versions of the Ricotta of Bufala Campana DOP, without changing the organoleptic characteristics of the product. To talk about the reasons and the importance of the changes in the interesting and accurate article by Marianna Brambilla, is Leo Bertozzi, representative of Italy on the board of Origin Europa, which makes it a reason and a tool for survival, for us actors in the PDO supply chain. Reason of pride for our Consortium, mentioned among the custodians of Italian agri-food excellence to make an important leap into modernity and to embrace the demands of an increasingly diverse audience, without ever affecting the quality of the product. In fact, consumer needs, market demands, environmental and climatic changes are just some of the factors that determine the need for continuous evolution of the DOP and PGI regulations. Rules and procedures previously conceived as crystallized over time, self-imposed and incorruptible dogmas to obtain the Italian agri-food excellence that are now questioned if necessary by the Consortia themselves, to keep up with the times and respond better to modern scenarios. It was the incessant change of the food needs of the Italians to require the changes made to our Disciplinary, changes that we have accepted and supported with the dual objective of contributing to a greater spread of the PDO on the market and supporting production volumes. Changes that have brought us closer to consumers attentive to the energy value of food and those who need to reduce or eliminate lactose intake and that thanks to this step forward will no longer have to give up the unique taste of our Ricotta of Bufala Campana DOP.
