Rules and procedures previously conceived as crystallized over time, self-imposed and incorruptible dogmas to obtain the Italian agri-food excellence that are now questioned if necessary by the Consortia themselves, to keep up with the times and respond better to modern scenarios. It was the incessant change of the food needs of the Italians to require the changes made to our Disciplinary, changes that we have accepted and supported with the dual objective of contributing to a greater spread of the PDO on the market and supporting production volumes. Changes that have brought us closer to consumers attentive to the energy value of food and those who need to reduce or eliminate lactose intake and that thanks to this step forward will no longer have to give up the unique taste of our Ricotta of Bufala Campana DOP.
